Thailand: Sustainable kitchen is ‘growing local’

When we think of sustainability in hotels, we think of common practices like zero waste, recycling, sorting trash, and reducing the use of plastic which are good things. But there are many other shades of green that can be done, and that's exactly what they are doing at Capella Bangkok.

Vana Farming's sustainable microgreen growing solution is used at a very small corner of the hotel where home-grown microgreens are sprouting and flourishing. "We were delighted every time to see microgreens growing or decorated on menus that are served to valued customers," the Vana Farming team says. "Most importantly, the smiles on the faces of growers themselves are what makes this highly valuable and fulfilling. It is not about growing microgreens. It is about growing and fertilizing the people in your local community to grow together as a whole."
