US (SD): Retailer offers local microgreens

If you want to set your cuisine apart by adding more complexity and nutrition to a dish, you would be hard-pressed to find a better ingredient than microgreens. Wild Spruce Market, a specialty food and product retailer, in Custer, S.D. offers microgreens which are organically produced in Rapid City, S.D.

Microgreens are one of South Dakota's unique year-round crops. These edible seedlings are newly sprouted vegetables and herbs that have grown just enough to display the plant's first true leaves. They are full of flavor and nutrition and are used to enhance dishes with their unique appearance and texture.

Microgreens are produced from a variety of plants, often harvested within three weeks of planting. Leafy vegetables such as arugula, cabbage, radish, or chard are grown, as well as herbs such as basil, cilantro or fennel. Additionally, slightly larger shoots from sunflowers, corn, or peas are available from some growers.

Located at 447 Mt. Rushmore Rd. in Custer, S.D., Wild Spruce Market recently partnered with Urban Farmer Microgreens, a local microgreen and mushroom producer. Microgreen salad mix and pea sprouts are currently available, but the store selection will expand as the weather continues to get nicer. "The micros are harvested and delivered to the store the next day. You really can't get fresher than that unless you grow your own," owner Claude Smith said.
