If you're looking for foods that pack a big punch in both nutrition and taste, microgreens might be a great option. Boise's Kirby's Microgreens started about a year ago, but its nutritional and fresh products are already selling out. Owner Blair Sheffield said it's been an unexpected ride, from discovering microgreens to developing a business.
"It's been kind of a roller coaster, meeting people and teaching them about these things, and spreading information about microgreens," he said. His journey with microgreens started accidentally. An avid reader, his wife gave him a survival book, and he became fascinated by a section about microgreens.
"I was reading about the nutrient and flavor profiles, and it kicked in for two reasons," he said. "Number one, I love to cook, it's one of my passions. Second, my wife and I strive to eat as healthily as we can."
This sparked Sheffield's interest. After a few weeks of research, Sheffield started purchasing supplies to build a grow room. After some success, he started taking his bounty into the office.
