US: CT Food for Thought expands greenhouse project with $1 million grant

New Opportunities Inc. is again expanding its CT Food for Thought project after landing a $1 million grant from the state's Community Investment Fund. The CIF board voted Tuesday in favor of the grant, said Torrington Economic Development Director William Wallach.

The grant will allow for the construction of a warehouse and five new greenhouses, New Opportunities President and Chief Executive Officer William Rybczyk said. In February 2024, the existing greenhouses were expanded from three to six.

CT Food for Thought, the retail arm of the Waterbury-based non-profit New Opportunities, consists of greenhouses where hydroponic lettuce is grown. Profits from the operation fund services in Waterbury, Meriden, Torrington and surrounding Connecticut towns.

The latest plan was to cost about $16 million and include up to 15 greenhouses, Wallach said. To get the project off the ground, New Opportunities partnered with the city to apply for an $8 million Community Investment Fund grant.
