AeroFarms, the U.S.-based indoor farming company, has introduced Micro Bok Choy to its lineup of aeroponically grown microgreens, marking the first time this variety is available at retail in the United States.
The eighth addition to the company's FlavorSpectrum™ line, a product portfolio that categorizes microgreens by flavor intensity and profile using a color-coded system, the crop is now on shelves at Whole Foods Market, Giant Food, and H Mart.
A familiar crop reimagined in micro form
Executive Chairman and CEO Molly Montgomery explained that the decision to develop the crop stemmed from earlier consumer enthusiasm.
"We previously grew baby Bok Choy at our New Jersey farm, which was very popular in both retail and food service due to its unique sweetness and hint of anise," said Montgomery. "Therefore, Micro Bok Choy was a natural next step as an addition to our colorful FlavorSpectrum of microgreens."
The product was initially piloted in the Northeast U.S. market. "Consumer feedback was extremely positive," she said. "Since launching, we have seen continued growth as it finds its way to the center-of-the-plate in homes, nationwide."
Nutrient-dense and sustainably grown
"Similar to the nutritional benefits found with all of our microgreens, Micro Bok Choy is rich in vitamins A, C, and K," Montgomery stated. "It is also an excellent source of fiber, as well as calcium, magnesium, and potassium." She also noted that microgreens can contain "four-to-40 times more nutrients than their mature vegetable counterparts."
The new product is grown and packaged at AeroFarms' indoor vertical farm in Danville, Virginia. Like the rest of the company's offerings, it is cultivated using patented aeroponics technology, which delivers nutrients directly to exposed roots in a controlled, pesticide-free environment.
"Because our microgreens are grown in a controlled indoor environment using aeroponics, they are not exposed to pesticides or fungicides," Montgomery said. "This means they do not require washing, which dramatically increases their shelf life. Our microgreens stay fresh 18 days post-harvest, much longer than microgreens grown in soil. This allows us to deliver long-lasting freshness and taste to consumers."

Market leadership and future growth
The launch of Micro Bok Choy also reinforces AeroFarms' market position. The company reports that it currently holds more than 70% of the U.S. retail market share for microgreens. The product's debut is part of a broader strategy to diversify offerings while reinforcing the brand's dual focus on flavor innovation and nutrition density.
While specific upcoming products were not disclosed, Montgomery confirmed that innovation remains central to the company's strategy. "AeroFarms is always testing new seed varieties, as we continue to think about how to diversify the way in which we deliver a nutrient-rich eating experience," she said.
