UK: On a mission to make microgreens mainstream in Witham

A woman with green thumbs is getting ahead of the curve to spread the word about superfood microgreens. Holly Barlow, 39, is a mum of two and has 15 years of horticulture experience, as well as a PHD in sustainable food systems.

Since January this year, she has been selling the produce from her business, Meadowside Microgreens, from St Nicholas Road in Witham. Microgreens are rich in vitamins, minerals and antioxidants, offering numerous health benefits such as improved digestion and enhanced nutrient absorption.

Mrs Barlow wants to spread the word about the health benefits associated with them and the fact they're a healthy alternative to the supermarket greens from industrial farming.

Mrs Barlow said: "I'm a passionate gardener. There is more and more information in the news about super diets and people having herbal drinks, and its all nonsense but it's natural. Diet diversity is a big thing nowadays."
