US: Exploring an organic mushroom farm in Los Angeles

In Foraging in Los Angeles Part 3, David Moscow heads to Smallhold, the only certified organic mushroom farm in LA County. Inside their futuristic warehouse in Vernon, he learns how the team mimics the forest floor indoors to grow spectacular varieties like blue oyster, yellow oyster, and trumpet mushrooms.

Guided by farmer Jesse, David carefully harvests clusters of mushrooms by hand, discovering the importance of avoiding cross-contamination between species and the techniques for getting a "perfect trumpet." Along the way, he learns how Smallhold sprouted from a Brooklyn basement startup in 2017 into a thriving urban farm now feeding Los Angeles.

With hands full of freshly picked mushrooms, David leaves ready to bring this unique harvest back to the kitchen — proving that even in LA's industrial corners, you can find a lush food forest.
