When Stuart Borton tells customers he serves farm to table, he is not kidding. For two decades, Borton, owner of foodie fave Yellow Dog Café in Malabar, has grown produce and herbs for his restaurant right next to the valet parking lot. His "secret ingredient" for the garden has been the 20 Verti-Gro™ vertical gardening systems. However, a growing need for more prompted the restaurateur to recently scale up production with the addition of 40 Tower Garden® aeroponic gardening towers provided by Brevard County-based Farmplicity Gardens.
"You can grow a lot of food in those towers," Borton said. During a trade show at the Orange County Convention Center, Borton chanced to see the 89 Tower Gardens that Farmplicity's owner Leala Dunn had installed in the foyer of the West Concourse. He wanted them. Soon Borton and Dunn were planning the next phase of the Yellow Dog produce farm.
"Leala has taken it to a whole new level," Borton said. Tower Gardens are high-yield, environmentally friendly farming devices that allow anyone to grow nutritious veggies and herbs even in the smallest of spaces. Not only is it convenient and hassle free, it can also produce superior output that can be enjoyed at optimal harvest. In comparison, store-bought produce has been harvested weeks before it reaches the store and is transported from hundreds or thousands of miles away. Somewhere along that trip, flavor fades.
